Do you remember how awesome college was? What was your most profound experience that lasted until today? In other words what did you begin doing then that you still do today?

Here's mine: ultimate frisbee and Mexican food. College is a very unique time in our lives. Suddenly, we're living on our own in a university dormitory.

Meanwhile, in high school there are lots of other concerns other than food. Just like girls, for instance. If you're fortunate, maybe you're girlfriend loved authentic Mexican food. Hopefully, she exposed you to the real deal.

The very first real Mexican food experience is one we'll never forget. Typically, our college buddies were the people who took us there. Maybe, the bait was for just a great beer special. Often the inspiration is something other than food for us. Maybe it was ladies night.

Whatever, the original motivation the lasting memory will be the food. That spicy, flavor-full food awakens you. Its impact on you will remain forever. That fantastic yearning that only an authentic Mexican restaurant could fulfill.

There will come a time when ladies and beer do not matter very much. But you've still got that craving for authentic Mexican cuisine. That's what life's all about. A single door shuts another opens.



As time passes old fraternity brothers fade into the past. At one time that thought alone seemed un-thinkable. For a very short time we were all so close. We all shared common goals and single-mindedness. But, all that has passed and a few things remain.

As we grow older our priorities change. Your pals from college now have their own lives. They have wives, kids and careers. Perhaps they've grown stuffy and full of status. Perhaps their financial standing stops them from going to that awesome, small Mexican bistro. Their children are very unfortunate not to experience these things until they're in college. Either way, the whole cycle repeats.

Beer, college and Mexican food: that's one of the great combinations of my life. We must do more than hope that real mom and pop Mexican restaurants survive. Think of how many phony, corporate franchises are threatening their existence. Will our kids and their children still have the comfort of savoring genuine Mexican cuisine?
